Christmas lunches and dinners are just around the corner. Here are five classic desserts reinvented with a lighter twist – some with a spoonful of our organic mushroom powders.

1. Apple pie smoothie

Recipe by @ana.valverdeb

  • 2 apples
  • Agave or coconut syrup, to taste
  • 1 teaspoon cinnamon
  • 100 ml water
  • 250 ml unsweetened almond drink
  • 2 tablespoons coconut yoghurt
  • ½ teaspoon vanilla extract
  • 2 tablespoons almond butter
  • 1–2 dates
  • 1 tablespoon linseed
  • 1 tablespoon oats
  • 1 tablespoon organic Lion's Mane powder (optional)

Cook the chopped apples with the cinnamon, syrup and a little water until soft (or microwave). Blend with the rest of the ingredients and serve – it's delicious with granola.

2. Ginger and orange bites

Recipe by @ana.valverdeb

  • 1 cup oats
  • 8–10 Medjool dates
  • Zest of ½ orange and juice of 1 orange
  • Chopped cashews
  • 1 tablespoon organic Cordyceps powder (optional)
  • 2 tablespoons honey or date syrup
  • 1 teaspoon ground ginger
  • A pinch of salt
  • Desiccated coconut, to coat

Soak the dates for 15 minutes, blend everything into a dough, roll into balls and coat in coconut.

3. Chocolate and avocado cream

Recipe by María Pérez-Seoane

  • 3–4 ripe avocados
  • 2–3 tablespoons pure cocoa powder (or carob)
  • 1–2 tablespoons organic Lion's Mane powder (optional)
  • 2–3 tablespoons raw honey or agave syrup
  • A pinch of salt
  • Optional: nuts, seeds, cinnamon, vanilla, a splash of plant-based drink

Blend the avocado flesh with the cocoa, mushroom powder, honey and salt until smooth. Taste and adjust.

4. Beetroot waffles

Recipe by @ana.valverdeb

  • 2 bananas
  • 2 eggs
  • 40 g oats (or buckwheat flour)
  • 10 g ground almonds
  • 100 g cooked beetroot
  • Butter, ghee or coconut oil for the waffle iron

Blend all the ingredients until creamy. Brush the hot waffle iron with oil, cook the waffles and serve with yoghurt, berries and nut butter.

5. Coconut panna cotta with berry coulis

Recipe by @roots.mi

  • 200 ml coconut cream
  • 3 tablespoons coconut flour
  • 50 ml unsweetened almond drink
  • 1 banana
  • 4 gelatine leaves
  • 2 tablespoons organic Lion's Mane powder (optional)

Soak the gelatine, blend the other ingredients, warm gently and dissolve the gelatine in the mixture. Pour into moulds and chill until set. For the coulis, heat frozen berries with the juice of half a lemon and a little water, then blend; sweeten with honey or dates if needed.
