1. Mycelium vs. Fruiting Body: the part of the mushroom

Fruiting Body: This is the visible, above-ground part of the fungus — the “mushroom” itself.

  • Bioactive compounds: It is extremely rich in beta-glucans, which have immunomodulatory properties, as well as species-specific compounds such as triterpenes in Reishi or hericenones in Lion’s Mane.
  • Quality: When only the fruiting body is used, the product is 100% pure mushroom, free from cultivation substrates such as rice or gluten. If it also carries European organic certification, this helps ensure that there are no traces of substances considered harmful to the body, in accordance with EU standards.
  • Products in this category may include 100% powder formats intended for use in smoothies, shakes, soups and similar preparations.

Mycelium: From a biological perspective, mycelium can be defined as the underground network of filaments that functions somewhat like the “root system” of the fungus.

  • Bioactive compounds: It contains unique metabolic compounds that are not always present in the fruiting body. One example is erinacines found in Lion’s Mane mycelium, which are of particular interest in relation to nerve growth factor.
  • The substrate issue – Quality: Most commercial mycelium is grown in bags containing grain, such as rice or oats. During production, it is impossible to completely separate the mycelium from the grain, meaning the final product often contains a high proportion of cereal starch in the form of alpha-glucans, together with relatively little actual mushroom, thereby diluting its potency.
  • However, some species require specific technological development because of their nature and production conditions. Cordyceps, for example, is native to Tibet and grows naturally from another living organism. At Hifas da Terra, specifically designed and safe culture media are selected, including liquid media in bioreactors, to ensure the highest possible concentration of active biomolecules for use in formulations without adding substances that provide no functional value.
  • In the European Union, the mycelium of many mushroom species is classified as a Novel Food, meaning it cannot be marketed as a food or food supplement without specific authorisation. There are, however, some exceptions for certain species, such as Cordyceps and Shiitake, whose mycelium may be used legally under the applicable conditions.

2. Powder vs. Extract: the processing method

Even when the whole mushroom is used, its cell wall contains chitin and other structural components that can limit the accessibility and bioavailability of certain compounds. Processing makes it possible to alter this cellular matrix and improve access to bioactive compounds. For this reason, the difference between mushroom powder and mushroom extract does not simply lie in the presence or absence of chitin, but in the way in which the various components are processed and concentrated. Mushroom Powder: The mushroom is simply dehydrated and ground.

  • In general, powder retains more of the mushroom’s complete matrix, including its fibre and structural polysaccharides, which may make it particularly interesting for its potential prebiotic effect on the gut microbiota.
  • At the same time, the accessibility and bioavailability of certain bioactive compounds may be lower than in an extract, depending on the species and compounds involved. It is therefore important to assess each species and its components individually, as depending on the intended purpose or application, the quantity and synergistic effect of the different compounds present in the powder may be more relevant than those found in an extract.
  • As with everything we do, an in-depth understanding of these compounds and their actions enables us to make the best decisions when developing genuinely active and functional formulations.

Mushroom Extract: The mushroom undergoes an extraction process, usually involving hot water and/or alcohol/ethanol, which alters the cell-wall matrix and promotes the release and accessibility of certain bioactive compounds.

  • There are also extraction processes that do not use organic solvents such as ethanol. Hifas da Terra is a pioneer in the development of this type of process. One example is the production of liquid Shiitake extract, whose branded ingredient is Lentizumib®, using an exclusive, sustainable biotechnology process in which only locally sourced spring water is used.
  • At Hifas da Terra, our research into new extraction methods began years ago through the work of our R&D team.   • Extraction allows bioactive compounds to be concentrated. An extraction ratio of 8:1 means that 8 kg of mushroom powder were required to produce 1 kg of pure, bioavailable extract. This is the standard format for high therapeutic-quality preparations such as those used by Hifas da Terra.

In Hifas da Terra formulations, the percentage of beta-glucans varies depending on the type of product, for example whether it is a pure extract or a blend containing powder. In extracts, thanks to the selection of specific strains, extraction processes and branded ingredients, beta-glucans typically account for approximately 25% to 30% of the total extract weight and make up the majority of the total polysaccharides. In some cases, levels of up to 50% are achieved. Unlike other brands on the market, this information is broken down in great detail on both product labels and product pages.

How is this quality verified and certified?

Measuring the components of a mushroom is not straightforward because their molecular structures are complex. Hifas da Terra uses a verification system similar to those employed in the pharmaceutical industry.

Hifas Quality System

  • Organic Certification – EU Organic Logo: Mushrooms are natural “sponges” that absorb substances from the soil. As the Hifas da Terra extraction process can concentrate mushroom material up to a ratio of 15:1, if the raw material contained heavy metals or pesticides, these could also become concentrated up to 15 times. Organic certification helps guarantee purity from cultivation onwards and the absence of pesticides, heavy metals and fertilisers in accordance with EU standards.
  • GMP (Good Manufacturing Practice): Manufacturing under pharmaceutical-grade standards to ensure that what is stated on the label corresponds exactly to what is contained in each capsule, while preventing cross-contamination.
  • Proprietary strain bank: The process is controlled from the mushroom’s genetic origin, selecting strains that naturally produce higher concentrations of bioactive compounds. A number of selected strains have already been used in the registration of branded ingredients developed to date, including:

Hifas da Terra does not use a single extraction method. Each mushroom species has its own characteristic composition and cellular matrix, and the different bioactive compounds present have distinct physicochemical properties. Extraction processes are therefore specifically developed and adapted to each species and to the compounds being targeted, with the aim of improving accessibility while preserving their characteristics. Depending on the species and the intended purpose of the formulation, different extraction media may be used, including water, ethanol or a combination of both. At Hifas da Terra, these processes form part of the proprietary development of each product and are optimised to achieve a specific profile of bioactive compounds. For this reason, when we refer to dual extraction, we do not necessarily mean an identical protocol for every product, but rather a process that combines different extraction strategies in order to broaden the range of compounds obtained. We are also committed to advancing extraction processes using pure water and other natural and sustainable solvents, such as those used for Hifas-Lentinan products and formulations based on Lion’s Mane. Below is an overview of how each method works and when it is used in our formulations:

  • 1. Water extraction: Water extraction makes it possible to obtain and concentrate various water-soluble compounds naturally present in the mushroom, including certain polysaccharides such as β-glucans. Process conditions are adapted to each species to promote extraction of the compounds of interest while preserving their characteristics.
  • 2. Dual extraction: Dual extraction combines different extraction media, typically water and ethanol, to obtain a broader spectrum of bioactive compounds with different physicochemical properties. While certain polysaccharides have good water solubility, other compounds, such as some triterpenes, sterols and lower-polarity molecules, may require hydroalcoholic media to support extraction. At Hifas da Terra, the dual-extraction process is adapted to each species and formulation, meaning there is no single protocol applicable across the entire range.

The Production Process: from Mushroom to Extract

To produce concentrated extracts and improve the availability of certain bioactive compounds, mushrooms undergo transformation processes specifically adapted to each species and formulation. Although the individual stages and conditions may vary, the process generally includes preparation, extraction, separation and concentration.

  • Preparation and milling: Dehydrated fruiting bodies are processed to produce a raw material suitable for extraction. Particle size can be optimised to improve contact with the extraction medium.
  • Controlled extraction: The raw material undergoes one or more extraction processes using appropriate media, such as water or ethanol, depending on the characteristics of the species and the compounds of interest. Process conditions are carefully controlled to promote extraction while preserving the characteristics of the bioactive compounds.
  • Filtration and separation: Once extraction is complete, soluble fractions are separated from the insoluble components of the mushroom matrix. The aim is to obtain a fraction enriched in the compounds intended for inclusion in the extract.
  • Concentration and drying: When a liquid extract is obtained, it may be concentrated and subsequently dried using different technologies, such as spray drying, where required by the process and product characteristics. The entire process is carried out in accordance with GMP (Good Manufacturing Practice), ensuring strict quality control and traceability. The result is a concentrated dry extract that can subsequently be used in product manufacture.
  • The importance of process control: Extraction and concentration conditions — including temperature, time and extraction medium — can influence the final compound profile of the extract. It is therefore important to define the process and desired objective for each formulation before selecting the most appropriate extraction method.

1. Cultivation Origin: in-house vs. third parties

Scientifically controlled Mycotherapy from Galicia. At Hifas da Terra, origin is an integral part of a clinical and scientific quality standard. From our biotech facilities in Galicia, we select strains with higher concentrations of active molecules, define cultivation protocols and verify the quality of every ingredient. Our production combines in-house cultivation with a network of specialist growers selected and audited according to the criteria of our Hifas Quality System. This network allows us to guarantee continuity, safety and consistent quality, viewing origin as the starting point of a process designed to achieve a final product with the highest possible levels of efficacy, safety and traceability. Every ingredient must meet the Hifas standard for identity, purity, safety and active biomolecules. If it bears the Hifas name, it meets the Hifas Quality System standard.

2. What traceability is provided? The HQS system

To ensure that externally sourced raw materials meet exactly the same standards as those produced in-house, and to guarantee the quality, safety and efficacy of our products, the company has developed the Hifas Quality System (HQS), a comprehensive traceability protocol “from spore to capsule”.

  • Genetic Traceability – Strain Bank: The process does not begin in the soil, but in the laboratory. Hifas da Terra owns one of the largest private mycological strain banks in the world. The company genetically selects the most promising strains of each mushroom, many of which have been isolated from forests in Galicia, and supplies this controlled-origin mycelium to its cultivation partners. This ensures that, regardless of where the mushroom is grown, the original biological profile is correct.
  • Organic certification and contaminant control: Because mushrooms naturally accumulate heavy metals or pesticides from the soil, traceability during cultivation is critical:
  • CRAEGA and EU Organic certification: The company has been registered with the Consello Regulador da Agricultura Ecolóxica de Galicia (CRAEGA) for more than 20 years. All external suppliers must grow mushrooms according to strict organic standards, without pesticides, chemical fertilisers or traces of genetically modified organisms.
  • Clean substrates: The substrates on which the mushrooms grow, such as wood, straw or selected cereals, are monitored to ensure they are free from toxins.
  • Triple Analytical Control – 360° Traceability: Unlike a conventional distribution channel, raw materials are comprehensively analysed at three critical stages using advanced laboratory techniques such as HPLC chromatography:
  1. At source: Analysis of the fresh mushroom or freshly harvested mycelium from the supplier.
  2. After extraction: Verification that the biotechnology process has concentrated the correct bioactive compounds, creating the mushroom’s characteristic extract fingerprint.
  3. In the finished product: Inspection of the final batch before encapsulation under pharmaceutical-quality GMP (Good Manufacturing Practice) standards.

Thanks to this chain of custody, Hifas da Terra can link each final capsule to the exact substrate batch, harvest date, heavy-metal analyses, microbiological analyses, pesticide and gluten testing, and the parent strain from which the mushroom originated.

Hifas da Terra products intended for oral consumption are marketed as food supplements and not as medicines. The terminology and administrative requirements may vary depending on the country in which they are marketed and the applicable national legislation, but the products fall within the food supplement category:

  • Spain, France and Italy: Food supplement / equivalent national designation.
  • United Kingdom (UK): Food supplement.
  • Germany (DE): Nahrungsergänzungsmittel (NEM).

The reasons why they belong to this category, and how this differs from other regulatory classifications, are explained below.

1. Why are they Food Supplements rather than another type of product?

The products are governed by European Directive 2002/46/EC on food supplements. This legislation defines food supplements as concentrated sources of nutrients or other substances with a nutritional or physiological effect, whose purpose is to supplement the normal diet. Why are they not medicines? Hifas da Terra products do not hold a marketing authorisation as medicines. Their labelling and communication must therefore comply with the regulatory framework applicable to foods and food supplements, and they cannot be attributed properties relating to the prevention, treatment or cure of disease. Why are they not Herbal Medicinal Products? Within the European Union, there is a specific category for traditional herbal medicinal products, which is subject to a simplified registration procedure. This procedure applies to certain medicinal products containing herbal substances or preparations that meet specific criteria relating to quality, safety and traditional use, among other requirements. In particular, registration based on traditional use requires evidence of medicinal use for at least 30 years, including at least 15 years within the European Union, as well as compliance with the other requirements laid down in pharmaceutical legislation. Hifas da Terra products are not registered as traditional herbal medicinal products. They are marketed within the regulatory framework for food supplements. The studied properties of mushrooms traditionally used in medicine should therefore not be confused with the legal classification of a medicine. A food supplement may contain ingredients with physiological activity, and there may be scientific evidence regarding their properties, without the product thereby becoming a medicine.

Why are tablets not used?

Unlike some other supplement brands, Hifas da Terra avoids using tablets for its Traditional Medicine mushroom products. Manufacturing a tablet requires the powder to be subjected to high pressure and generally requires the addition of significant quantities of binding agents, stearates and synthetic coatings, which can reduce the purity of the mushroom content.

The average shelf life of Hifas da Terra food supplements varies according to the dosage form — capsules, powder or liquid — and depending on whether the packaging remains sealed or has already been opened. In general, the long-term stability of the compounds is supported by high-protection packaging designed to shield the contents from light and moisture. Shelf life by format:

  • 2. Protect from moisture — A critical factor

Dehydrated mushroom extracts are highly hygroscopic, meaning they have a strong capacity to absorb moisture from the surrounding air.

  • Airtight closure: It is essential to close the lid firmly immediately after each use.
  • What happens if moisture gets in? If the environment is humid and the container is not closed properly, the powder inside the capsules may compact, darken or become sticky and form clumps. This does not necessarily mean the product has expired or deteriorated, but it may make dispersion more difficult, particularly for people who have difficulty swallowing capsules and prefer to open them before taking the product.
  • Areas to avoid: Never store supplements in the bathroom or close to the kitchen sink, as these tend to be the areas with the highest levels of water vapour.
  • Children’s range — Syrups: After opening, syrups should be stored in the refrigerator at between 4°C and 6°C and shaken thoroughly before each use to ensure the extract is evenly dispersed.
